An intimate counter where the itamae cooks in front of you, anchored by a twelve-course omakase that rotates seasonally and a short à la carte of tiraditos, makis and hot plates where ají amarillo and Nikkei sauce meet dashi and miso. Akira Vargas (Lima, 1987) is the granddaughter of Iwate fishermen and the great-granddaughter of Ayacuchan farmers. She trained at Maido and Toshiro's before spending two years in Tokyo between Sushi Yoshitake and the omakase counter at Toyosu market. Itamae 47, opened February 2022, is her first solo project.
